docs: strip EXIF chunk from UI screenshot

The PNG carried an eXIf chunk (image dimensions — no GPS/camera/author
data, but metadata nonetheless). Re-encoded keeping only image-critical
chunks (IHDR, sRGB, IDAT, IEND).
